Ingredients:
1 box of Sof’ella’s Gluten Free Chocolate Cake Mix
1 (3.9 oz) package instant chocolate pudding mix (Jello brand is Gluten Free)
1 – 16oz container of Sour Cream (I like Daisy – and it is Gluten Free)
3 eggs
1/3 cup oil
1/2 cup strong coffee
2 Tablespoon vanilla
2 cups semisweet chocolate chips (I like Enjoy Life – Gluten Free Chocolate chips)

Directions:
• Preheat over to 350 degrees and grease and flour (rice flour) a 10 inch Bundt pan.

• In a large bowl combine Sof’ella cake mix, sour cream, eggs, oil, vanilla and coffee.

• Beat until ingredients are well blended.

• Fold in chocolate chips.

• Spoon batter into the prepared bundt pan.

• Bake in preheated over for one hour or until the cake springs back.

• Cool ten minutes on a wire rack. The cake will start to pull away from the sides of the pan and fall slightly. Turn out and cool completely on the rack.

After the cake is cool I love putting a little bit of powdered sugar on top for eye appeal (make sure to look at the ingredients on the powdered sugar bag – some are not gluten free). I then put a little of the powdered sugar on a plate and a drizzle of gluten free chocolate syrup, before a slice of this super rich, moist, and decadent cake.

What is Celiac Disease?

Celiac disease is an inherited autoimmune disorder that affects the digestive process of the small intestine. The small intestine is connected to the stomach-the first parts of the small intestine, the duodenum and the jejunum, are where celiac disease is commonly found.

When a person who has celiac disease consumes gluten, a protein found in wheat, rye and barley, the individual’s immune system responds by attacking the small intestine and inhibiting the absorption of important nutrients into the body.

Specifically, tiny fingerlike protrusions, called villi, on the lining of the small intestine are lost. Nutrients from food are absorbed into the bloodstream through these villi. Celiac disease can be associated to other autoimmune disorders and, undiagnosed and untreated, it can lead to osteoporosis, infertility, neurological conditions and in rare cases, cancer.

Celiac disease, also known as gluten intolerance, is a genetic disorder that affects at least 1 in 133 Americans. Symptoms of celiac disease can range from the classic features, such as diarrhea, weight loss, and malnutrition, to latent symptoms such as isolated nutrient deficiencies but no gastrointestinal symptoms. The disease mostly affects people of European (especially Northern European) descent, but recent studies show that it also affects Hispanic, Black and Asian populations as well. Those affected suffer damage to the villi (shortening and villous flattening) in the lamina propria and crypt regions of their intestines when they eat specific food-grain antigens (toxic amino acid sequences) that are found in wheat, rye, and barley. Oats have traditionally been considered to be toxic to celiacs, but recent scientific studies have shown otherwise. This research is ongoing, however, and it may be too early to draw solid conclusions.

Because of the broad range of symptoms celiac disease presents, it can be difficult to diagnose. The symptoms can range from mild weakness, bone pain, and aphthous stomatitis to chronic diarrhea, abdominal bloating, and progressive weight loss. If a person with the disorder continues to eat gluten, studies have shown that he or she will increase their chances of gastrointestinal cancer by a factor of 40 to 100 times that of the normal population. Further, gastrointestinal carcinoma or lymphoma develops in up to 15 percent of patients with untreated or refractory celiac disease. It is therefore imperative that the disease is quickly and properly diagnosed so it can be treated as soon as possible.
