Red Velvet Cake

High Altitude Instructions:

For 5000 - 7000 ft: Increase temperature to 350°F. Add 2 Tbsp. Flour and add 1 Tbsp. Water (1 cup + 1 Tbsp). Decrease Oil to 2/3 cup

Vanilla Bean Bundt Cake

For 5000 ft: Add 1 Tbsp. of all purpose flour to the dry cake mix. Increase milk to 1/2 cup + 2 Tbsp.

For 7000 ft: Add 2 Tbsp. of all purpose flour to the dry cake mix. Increase milk to 3/4 cup.

Follow all other instructions as stated.

Pound Cake

High Altitude Instructions:

For 5000 ft: Add 2 Tbsp. of all purpose flour to the dry cake mix. Increase milk to 1/2 cup+ 2 Tbsp.

For 7000 ft: Add 4 Tbsp. of all purpose flour to dry cake mix. Increase milk to 3/4 cup.

Beat batter for only 1 minute.

Follow all other instructions as stated.

Sof'ella Gluten Free Chocolate Cake

For one packet of Cake Mix at an altitude of:

High Altitude Instructions:

For 5000 ft: Add additional 3 Tbsp. water.
For 6000 ft: Add additional 3 Tbsp. and 1 1/2 tsp. water.
For 7000 ft: Add additional 4 Tbsp. water
For 8000 ft: Add additional 4 Tbsp. water and 1/2 tsp. water

Additionally, for all elevations 5000 feet or higher:
· Increase oven temperature to 350°F.
· Add an additional whole egg (3 whole eggs total)
· Add the recommended 2/3 cup butter
· Mix only until mixture is combined (batter will be thin)
· Tap pan(s) to release air bubbles
· Bake the cake(s) on the lowest rack in the oven
· Bake 27-32 minutes for two 8" round pans (at least 1 3/4" high) and 50-55 minutes for one 9" round pan (at least 1 3/4" high) or until the center is set and the cake begins to pull away from the sides.

Pumpkin Spice Bars

For 5000 - 9000 ft: Bake for 30-40 minutes at 375°F

Sof’ella Chocolate Chip Cookie

For 5000 ft: Preheat oven to 350ºF.  Follow all other instructions as stated. For 7000 ft: Preheat oven to 350ºF. Add 2 Tbsp. of all purpose flour to the dry cookie mix.

For 5000 ft: Add 2 Tbsp. of all purpose flour to the dry mix.  Increase water to 11/4 cups + 2 Tbsp.

For 7000 ft: Add 1/4 cup of all purpose flour to the dry mix.  Increase water to 11/2 cups.

Proofing time will be reduced to approximately 40 minutes.

For 5000 ft:  Increase the water to 11/4 cups + 2 tsp. 

For 7000 ft:  Increase the water to 11/3 cups.
